Kairos Zymè 2010

The Kairos by Zymè is a wine absolutely unique, a real mosaic of sensations and emotions. A wine that tells the story of a cellar, Zymè, that fascinated us in an instant. Arises from at least 15 different grapes, of which 4 white grapes (Garganega, Trebbiano, Sauvignon Blanc and Chardonnay) and 11 red berry (Corvina, Corvinone, Rondinella, Cabernet Sauvignon, Cabernet Franc, Merlot, Syraz, Teroldego, Croatina, Oseleta, Sangiovese and Marzemino). Grapes that make each a characteristic, distinctive, unique. "Kairos" in ancient greek means "convenient, appropriate for the right time" and this wine of Zymè embodies precisely this definition. A unique philosophy represented by the label of the bottle that is a mosaic of patches of many colors, to witness the origin of 15 different grapes, and a sundial that expresses the concept of the exact time, as defined Greek. Elements that make it a fascinating wine, a perfect representation of the terroir of origin. Speaking of vineyards here is difficult because each grape comes from estate distinctive; all are located in the province of Verona and all are grown with organic fertilization and pruning manual, with selection of buds and harvest strictly manual. Harvest following the different ripening times of the multiple varieties of grapes used. Vinified in stainless steel tanks and cement, then goes to ferment with indigenous yeasts for 20-25 days. After this period is transferred to French oak barrels and stop here for at least 36 months, before spending another year in the bottle to stabilize.
