The Passito "Sol" by Ezio Cerruti is a remarkable wine; abnormal and subversive, as his producer Ezio, surprising for some features, which make it unique: first the sweetness that never borders on cloying, second clean scent, that gives this sweet elegance and sophistication really shine. The Passito "Sol" can really be regarded as the emblem of the thought of Ezio Cerruti, a farmer by choice, that decided to devote himself full time to what has always been his passion: the vineyard. Since 2001 he has started to produce wine grapes to make a Passito, what he considers his preferred interpretation of Muscat grape, far from any technological or chemical use. In fact, the idea of wine of Ezio is based primarily on non-intervention: the facts are so few transfers, using low sulfur and clarifications are made by decantation. Ezio, firmly believing in the potential of a territory and a vine, is taking a very humble towards nature, allowing that the maturation of the plants take its natural course.
