The Sparkling Brut "Abissi" is the emblem of Bisson; a project was born as a joke; as a bet, a brilliant thought of Pierluigi Lugano; follow an aging out of the ordinary, not as always happens in caves or wineries or in the mountains, but in the seabed. A cool place and protected from light, a place that once housed the old wrecks of the galleons. Cala degli Inglesi, in the heart of the Marine Park of Portofino, is the site chosen to hone his Metodo Classico, made from grapes that Bianchetta, Genovese, Vermentino and Pigato. An early harvest and a temperature-controlled fermentation, then the draw with selected yeast and fermentation. And then, just at the bottom of the sea. In stainless steel cages, to a depth of 60 meters and a constant temperature of 15°. 18 months of aging to develop and evolve with its lees in a unique environment, where the quality and subtlety emerge clearly. Straw yellow in color and with a musky scent that evolves from brackish water. "Abissi" by Bisson: an idea, maybe an intuition that initially might have seemed crazy, but that turned out to be really brilliant, high-impact and highly successful.
